What is in a French 75 cocktail? Basically
1 oz Gin
1/2 oz Lemon juice
2 TBS Simple syrup
2 oz Champagne
Or if you prefer ounces
1 ounce gin
1/2 ounce lemon juice, freshly squeezed
1/2 ounce simple syrup
3 ounces Champagne (or other sparkling wine)
Garnish: lemon twist

2 tablespoons fresh squeezed lemon
or substitute lemon curd 1 tsp.
6 ounces gin, chilled. I like Bombay Blue Saphire, but good Gin is preferred.
1 bottle (750 mL) sparkling wine, such as Champagne or cava, chilled

Step 1
Combine sugar and water in a measuring cup or microwave safe container. Microwave for 2 minutes. Bring to a heat allows the sugar to dissolve. Remove from microwave; add lemon juice. Let syrup cool. Pour into container with spoon to keep the heat from cracking your glass
Step 2
To assemble each cocktail, combine 1 tablespoon simple syrup, 1 tablespoon fresh squeezed lemon juice, and 1/2 ounce gin in a Champagne glass. Top off with Champagne; gently stir to combine. Garnish with lemon rind or twist; serve immediately.
